Jam Drops

Jam Drops (Nan’s recipe)

Best served with a cup of tea!

Ingredients

¾ cup of sugar
½ cup of butter
2 cups of self raising flour
2 eggs
Couple of drops of vanilla essence
Jam – You’re favourite flavour J
Coconut

  1. Pre heat oven to 180 or 150 fan force
  2. Cream sugar and butter together
  3. Add flour, eggs & vanilla essence; mix well
  4. Roll dough into balls and poke a hole in the top of each one with your finger
  5. Spoon a small (or large J ) amount of jam into each ball and sprinkle with a little coconut
  6. Bake for 25-30 minutes
  7. ENJOY!

I used raspberry jam from Miss Marples Tea Room in Sassafras, make sure you visit if you’re in the area! So gorgeous x

Our Wedding

Today is our 3rd wedding anniversary so it’s seems apt to write about one the happiest days of my life (equal only to the birth of our son)!

Both my husband and I grew up on the North Coast of NSW so early on it was decided that we would want to get married at home in one of the most beautiful places in the world!

We decided on a resort in Byron Bay which offered everything we were after; the beach, a relaxed atmosphere, a restaurant (as opposed to a stark function room) and the opportunity to celebrate the ceremony & reception in the day time! I always wanted a lunch time wedding, and we wanted to make the most of the amazing Autumn weather and have our guests enjoy the views of the area.

We held the ceremony & pre-lunch canapés on a beautiful grassed area right on the beach, and afterwards everyone mozzied on down to the restaurant. This is exactly how I imagined it would happen, I didn’t want people to be rushed so we ended up having pre-lunch go for about 2 hours on the beach, this was perfect for people to be able to catch up and just enjoy being in the sunshine! It was so nice to see the photos afterwards of all our guests wandering down to the restaurant for lunch, everyone looked so RELAXED!!

Everything was perfect, from the amazing sunshine, to the food, to the guests and of course to marrying my best friend – what an amazing experience!

Baked Goods

I was always a savoury girl – you know; chips, dips, cheese etc. I had never had a real sweet tooth until I fell pregnant! Cakes, slices, muffins, anything baked! And I now, I must admit I still have this craving even though my son is 17 months old…. Even this morning I couldn’t help but get a blueberry muffin to go along with my coffee J

I have my birthday coming up soon and I have ordered cupcakes, YUM!! Half Pink Champagne and half Strawberry Cream Cheese....DELICIOUS!! What's a birthday celebration without scrumptious & moorish sweets!

Don’t get me wrong I still love a good cheese platter, but now (dangerously) I won’t say no to dessert either!


At a friend's birthday picnic on the weekend and his 2 1/2 year old daughter along with a couple of friends made this chocolate & quince tart....so good!


There were also a few other cake varieties to choose from - apricot, chococlate with raspberry coulis, blueberry, custard & quince tart and chocolate & hazelnut!!!!


Who could say no to a cupcake??

Camping

Like thousands of other Australians, we too packed the car (to the brim of course) and headed camping for the Easter break. Getting away for a few days was just what we needed after being very busy moving house, packing, unpacking, sorting and cleaning!! Once the tent and site were set-up, we could breathe a sigh of relief and just enjoy doing absolutely nothing! The most I did was drink lots of cups of tea & coffee, my husband on the other hand enjoyed a few surfs and a bike ride, boys just can't sit still can they?

Another reason we love to get away camping is because our young son has the space and freedom to run, explore, get dirty and "hang" with other kids who love doing just the same. It's the best feeling seeing your child "run free"!


It was a little chilly at night, but nothing a good fire and an even better glass of red wine couldn't subside.....
